The Friday File: During CY2023, the number of table egg laying hens averaged 315 million. In CY2024, due to Avian Flu the number averaged 307 million. In 2/2025 the number was just 291 million. Since 2023, the number of egg layers is down only 8%. But during that same period prices, which averaged $2.59/dozen in 2023, $2.83/dozen in 2024, and $5.69/dozen from 1/25-3/25, are up 120%. Stop eating eggs!
